Honey Cashew Chicken
Forget takeout and cook in with super-fast Honey Cashew Chicken with Rice. The sweet honey-citrus sauce turns ordinary poultry into something special.
Ingredients:
6 tablespoons soy sauce
1 tablespoon hoisin sauce
1 tablespoon rice vinegar
2 tablespoons honey
5 tablespoons ketchup
1 teaspoon sesame oil
½ tablespoon ginger, minced
2 cloves garlic, minced
¾ lb chicken breast, cut into 1-inch (2 1/2 cm) pieces
salt, to taste
pepper, to taste
2 tablespoon cornstarch
1 tablespoon sesame oil
¾ cup roasted cashew
½ cup water
Direction:
Step 1: In a medium bowl, combine the soy sauce, hoisin sauce, rice vinegar, honey, sesame oil, ginger, ketchup and garlic. Set aside. In a medium bowl, season the chicken with salt, pepper, and mix with cornstarch. Heat a 9.5″ fry pan over medium-high heat and add oil. Add the chicken and fry for 5-6 minutes, or until the chicken turns golden in color.
Remove chicken and set aside in a separate bowl.
Step 2: Drain the oil from the pan that just fried the chicken. Heat up the same pan. Add the sauce mixture to the pan and bring up to a boil. Add the chicken and cashews Stir together and allow sauce to thicken.
Remove from heat and serve over rice. Enjoy!
