Shrimp Corn Stir Fry
A flavorful mix of shrimp and corn makes this healthy dinner recipe taste like something you’d order while dining out. Shrimp Corn Stir Fry is a quick, lean, high-protein meal that is full of fresh veggies. It’s great for busy weeknights or meal prep.
INGREDIENTS
2 tbsp. oil
1 lb. shrimp, peeled and deveined
Kosher salt
Freshly ground black pepper
1 tbsp. sesame oil
1 green bell pepper, diced
8 oz corn (fresh, frozen or caned)
1 small carrot, diced
3 cloves garlic, minced
2 tablespoons soy sauce
2 oz ham, diced. (optional)
1 tablespoon green onion, dice ( or use onion)
Direction:
Step 1: In a large skillet over medium heat, heat oil. Add, green onion (onion), shrimp and season with salt and pepper. Cook until pink. Add garlic, corn and carrot and cook until soft, 5 minutes. Add ham if using. Add salt and mix well.
Step 2: Add green bell pepper. Mix well. In a small bowl, whisk together soy sauce, 2 tablespoons of water and cornstarch. Add to skillet and toss to coat. Serve with rice.
