Chinese Pork Ribs Stew with Corn

 

This Chinese Pork Ribs Stew with Corn is one of the most popular Chinese stews. Super easy & quick to make this sweet & delicious ribs and corn stew that tastes like mom’s.

 

Ingredients

1 lb pork ribs, or you can use big bones in cold winter days
1 scallion
1 small chunk of ginger
2 corn, cut into small sections
2 oz raw peanuts
salt to taste

3 cloves of garlic, slice in half
2 star anises
2 tablespoons vegetable oil
1 tablespoon dark soy sauce
2 tablespoons soy sauce
3 tablespoons cooking wine
1 cup hot water
3 tablespoon sugar
Chopped scallion and coriander for garnishing (optional)

 

Direction:

Step 1:    Ask your butcher to help you cut the ribs into small sections. Add the ribs in a pot with enough water. Add 1 scallion and ginger and then cook for 2 to 3 minutes after the water boils. Clean and drain.

 

Step 2:    Heat oil in the dry deep fry pan over medium-high heat,  add sugar.   Stir till sugar turn golden brown.   Turn heat to low.  Add ribs.  Stir till ribs turn golden brow about 3-5 minutes.  Add the soy sauce, dark soy sauce and cooking wine.    Add enough hot water to cover the meat.  Toss in the ginger, garlic, green onion and star anise.   Let it simmer for 20 minutes.

                

 

Step 3:   Add corn and peanuts to the pot.   Mix well ant let it cook for another 30 minutes.   Add salt to taste and serve with chopped scallion and coriander.
