Tomato Tofu Soup
A quick and simple go-to weeknight meal, this easy tomato tofu egg drop soup recipe is jam-packed with healthy ingredients and bursting with flavour. Cook this delicious and vibrant Chinese soup at home in 20 minutes.
4 tomatoes (diced)
12oz silken tofu
3 large eggs (whisked)
1 green onion (diced)
6 cup vegetable stock or chicken stock or water
Salt, to taste
Step 1: Add the tomatoes to the pot. Pour stock into the pot and boil over medium-high heat. Cook until tomatoes are tender. Once the soup comes to a boil again, quickly turn off the heat and slowly pour in the eggs into the soup. Make sure you continually stir the soup when adding the eggs.
Step 2. Bring the pot to a boil. Carefully add the silken tofu to the soup. Break the tofu into small pieces. Bring the pot to a boil and turn off the heat.
Season with salt and green onion and serve while hot.
