Farmers’ Chicken Stew
Chicken Stew, a stew full of with not only chicken but veggies too. And of course, there is nothing better to pleat into a cold winter’s night than a hearty bowl of a stew of chicken.
Ingredients:
3 tbsp cooking oil
5 cloves of garlic (sliced)
1 thumb ginger (sliced)
one green onion (cut into 2 inch )
1 chicken around 3 lbs (chopped to two inches pieces)
2 medium sweet potato or 1 large sweet potato (chopped roughly)
3 tbsp light soy
3/4 tsp salt (or to taste)
2 corns (chop to large pieces)
Direction:
Step 1: Heat cooking oil in a wok and saute the garlic, ginger, green onion until golden brown. Add in chicken pieces and stir fry until meat turns white.
Step 2: Pour in light soy sauce and stir fry until well combined. Add in enough water to cover the chicken. Cover with lid and simmer for 20 minutes.
Step 3: Add salt to taste. Add corn and sweet potato and simmer for another 10 minutes. Turn off the heat and let the pot sits there for 5 more minutes. Add diced green onion if desired.
Dish out the stew and serve hot with steamed rice. ENJOY.
