Shrimp Edamame Stir Fry

 

This  shrimp stir fry with edamame, and bell pepper, and serve over  rice for a quick, easy, and healthy recipe for a weeknight dinner!

 

Ingredients

salt and freshly ground black pepper to taste
2-1/2 Tbs. vegetable oil
1 Tbs. thinly sliced fresh ginger
3 medium cloves garlic, minced
1 small red pepper
1 lb. large (31 to 35 per lb.) shrimp, peeled and deveined
1 cup shelled edamame (thawed if frozen)
1-1/2 Tbs. soy sauce; more to taste
1 tsp corn starch

 

Direction:

Step 1:  Mix shrimps with salt, black pepper and corn starch.  Boil water in a pot.   Add shelled edamame.   Bring up to a boil.  Drain the water and set aside.

    

 

Step 2:    Heat 1 Tbs. of the vegetable oil in a large wok or nonstick skillet over medium-high heat. Add the shrimp and edamame, and stir-fry until the shrimp turn pink, 3 to 4 minutes. Add the red pepper, garlic, and ginger, and stir-fry for a few seconds.  Add soy sauce and edamame and stir fry for 2 minutes.

            

 

Season to taste with additional soy sauce, sesame oil, and hot sauce, if you like.
