Chinese Tomato Dumpling
The wonderful fresh tomato taste makes these light savory dumplings. They’re just so good! A tender, doughy pocket that’s filled with a savory, flavorful filling is pretty hard to pass up. You can make your own dumplings right at home that are every bit as tasty. It’s a fun little project.
INGREDIENTS
1 lb tomatoes
4 eggs
1 package dumpling (gyoza) skins
1⁄4 cup oil
1 1⁄2 teaspoons salt
3 green onion, diced.
Direction:
Step 1: Blanch tomatoes, remove skins, mince, and drain liquid. Whisk eggs, then stir-fry in oil and set aside.
Combine eggs and tomatoes. Add diced green onion. Season with salt. Mix well.
Step 2: Stuff dumpling skins with egg and tomato mixture, and pinch sides together to form half-moon shape. Seal well. Bring large pot of water to a boil. Drop in dumplings in batches and boil until they float. With slotted spoon, remove to platter.
