Shaved Beef with Tomato Sauce

Ingredients
Marinade
1/2 tablespoon sugar
1 teaspoon salt
1/2 tablespoon light soy sauce or 1 tablespoon dark soy sauce
1-2 tablespoons cornflour, mixed with 1 tablespoon water
1 lb or 450g shaved beef or steak, thinly sliced
1 tablespoon oil
2 tablespoons sliced garlic
1 tablespoon oil
1 green onion, sliced
1 thumb ginger, sliced
1 tablespoon oyster sauce
2 tablespoons soy sauce
2-3 tomatoes, diced
Sauce
2 tablespoons tomato ketchup
4 tablespoons tomato puree
water, as needed
salt to taste
sugar to taste
Direction:
Step 1: Make the marinade by mixing together the sugar, salt, soy sauce and cornflour slurry. Mix in the beef, allow to marinate for 15 minutes.
Heat a large frying pan with 1 tablespoon oil. Stir-fry the ginger, green onion(white part) and garlic until aromatic, 2-3 minutes. Add the diced tomatoes and stir-fry until juice comes out and becomes a sauce, about 10 minutes. Add oyster sauce and soy sauce.
Step 2: Add the tomatoes, tomato ketchup, tomato puree and stir for 2-3 minutes. Adjust the seasoning accordingly. Add 1 cup of water.
Bring the sauce to the boil. Add the beef, stir to combine and bring up to a boil again. Add black pepper and green onion and serve.
