Chinese Sausage Snow Peas Stir Fry
Sausage stir fry with snow peas – it is one of the stable recipes in China. It is so quick, easy, and delicious. The sausage is very intense. And the snow peas are slightly sweet. They balance each other perfectly.
3 tablespoons peanut oil
1 1/2 pounds snow or sugar snap peas, washed and trimmed
1 teaspoon dark sesame oil
1 tablespoon minced garlic
1 to 2 tablespoons soy sauce
Step 1: Place 3 tablespoons peanut oil in a large, deep skillet or wok and turn heat to high. When it begins to smoke, add garlic and toss in peas and cook, stirring almost constantly. Add Chinese sausage and stir fry until the snow peas are glossy, bright green and begin to show a few brown spots and the Chinese sausage is almost clear and see through, about 5 minutes.
Turn off heat and remove peas to a platter. Drizzle with sesame oil and soy sauce. Taste and adjust seasoning, and serve.
