Ingredients

1 lb  ground pork
1/2  onion, finely chopped
3 cloves garlic, minced
8 hot peppers ( banana pepper or other small hot pepper of your choice.  If you can not eat spicy pepper, pick sweet pepper.  It is better to go with small peppers).
Salt and pepper to taste
2 tablespoon of minced ginger
1  green onion
2 tablespoon soy sauce
1 tablespoon cooking wine
3 tablespoons of cornstarch + 1 tablespoon cornstarch for the pork filling

Directions

Step 1:  Mince ginger, onion, and garlic.   Add 1 tablespoon of the ginger and all the garlic and all the onion to the ground pork.   Add salt and black pepper to taste.  Add 1 tablespoon of soy sauce.  And add 1 tablespoon of cornstarch. Mix well.

Step 2: Rinse hot peppers, and removed ends to seed them. If you want super spicy stuffed peppers, add the seeds to the pork filings.

Step 3: Carefully stuff the hot peppers with the pork filling.  Dip the top into cornstarch so the filling won’t come out during cooking.

Step 4: Put oil into a pan.  Turn on medium heat. Place the stuffed peppers into the pan and cook each side for 2-3 minutes, or until browned.   Take the peppers out and set aside.

Step 5: Pure the oil out of the pan.  Leave about 1 tablespoon of oil in the pan.   Turn the heat on high.   Add 1 tablespoon of ginger and mince green onion to the pan.  Stir fry for 30 seconds.   Then add 1 tablespoon of soy sauce, 1 tablespoon of cooking wine.  Then add 1/2 cup of water.

Step 6: Put stuffed pepper back into the pan.  Cover and cook for 8 minutes on medium heat or till most of the sauce is gone.

Plate and serve.
