Beef Okra Stir Fry

 

My favorite way to cook okra is in a stir-fry with beef. Okra is also fantastic with tomatoes, a natural pairing since okra and tomatoes are part of the same late summer crop.

Ingredients

2 tablespoons olive oil
1/2 onion chopped
2 cloves garlic chopped
10 grape tomato
2 cups fresh okra cleaned and cut into 1″ slices
salt to taste
fresh ground black pepper

3 tsp cornstarch / corn flour
4 oz beef tenderloin, sliced
2 tbsp soy sauce
1 tbsp oyster sauce
2 tbsp Chinese cooking wine OR Mirin
1/2 tsp sesame oil (optional)

 

Direction:

Step 1:    Combine the cornstarch and 2 tbsp of water in a small bowl, mix until smooth. Mix in soy sauce, oyster sauce, cooking wine, and black pepper.  Place the beef and 2 tbsp of Sauce in a bowl and mix gently. Set aside for 15 minutes.  Add 1/3 cup water into the remaining Sauce. Set aside.  Cut okra.

  

 

Step 2:    Heat oil in wok over high heat. Add garlic and cook for 15 seconds.   Add onion and cook for 1 minute.  Add the beef and cook until it changes colour from red to light brown but not cooked through.   Add garlic, grape tomato and okra and stir fry for 3 minutes.

             

 

Step 3:    Add Sauce and cook for 1 minute until the Sauce is thickened.  Remove from heat immediately.
