Shrimp Tofu Stir Fry

 

Tofu with Shrimp is a Chinese dish that looks deceptively simple but is gorgeous when you try it.

 

 

INGREDIENTS

3 tablespoons hoisin sauce
2 tablespoons rice vinegar
2 tablespoons water
2 teaspoons sugar
1⁄2 teaspoon ground ginger
2 teaspoon cornstarch
2 red hot pepper, sliced
2 tablespoons vegetable oil
14 ounces tofu, drained and cut into 1 inch cubes
1⁄2 lb medium shrimp, shelled and deveined
1 clove garlic, minced
3 think slice of ginger

1 green onion, diced

 

Direction:

Step 1:    Combine hoisin sauce, vinegar, water, sugar, ginger and 1 teaspoon cornstarch and set aside.  Add another 1 teaspoon corn starch to shrimp and mix well.   Add 1 tablespoon oil to skillet; stir-fry garlic, ginger and shrimp for 2 minutes over medium-high heat, stirring constantly; add red hot chilly pepper and hoisin sauce mixture  and cook, stirring until thickened and shrimp turns slightly pink, about 3 minutes; add tofu and combine well but stirring very gently so as not to break up the tofu cubes. Add 2 tablespoons of water or stock and cover the pot.   Let cook for 2 minutes.   Add diced green onion.   Serve with white rice.
