Pineapple Fried Fice

 

Pineapple Fried Rice – a super easy fried rice meal with chunks of pineapple for that tropical flavor. It’s super quick and easy. This side dish is served up in an easy to make pineapple boat for an exotic touch.

Ingredients

1 tablespoon canola oil
1 lb ham, cut into small chucks
2 tablespoons canola oil
1  fresh pineapple. cut into large chucks (caned pineapple also works)
1 teaspoon minced ginger
1/2 medium onion , sliced
2 green onions , chopped
2 teaspoons minced garlic
1 small cucumber, diced
3 Large eggs , lightly beaten
1 cup peas and carrots (Frozen, thawed)
3 tablespoons or more soy sauce replace with 3 Tablespoon low sodium soy sauce)
Hot sauce (Sriracha or your favorite hot sauce) to taste
Salt to taste (optional)

 

Direction:

Step 1:    Cut the pineapple in half lengthwise. Use a knife to create a bowl shape inside each half. Cut out long pineapple spears adjacent to the core. Cut out the pineapple core.
Scoop out any excess fruit. Lightly dry the inside.

            

 

Step 2:   Get all the vegs ready.    Heat a large wok or skillet on medium high heat with about a tablespoon of canola or vegetable oil.  Then add eggs mixture, cook without stirring for 5-10 seconds or until the eggs sets on the bottom and is slightly cooked.  Then scramble eggs into smaller pieces and set aside.

                 

 

Step 3:    Add about 1 tablespoon oil to the same pan.   Once hot add the onions, ginger, and garlic, stir-fry for 30 seconds.   Add the carrots and cook for about 2 minutes. Add the  peas, cook 1 minute.    Add the ham, cucumber and egg, cook 1 minute.  Mix well.

            

 

Step 4:    Add the rice, constantly stir to combine and cook for 2 minutes.    Add pineapple chucks, soy sauce and hot sauce. Continue stirring until ingredients have heated through.

        

 

Season rice with black pepper as desired. Transfer rice into pineapple bowl and garnish with cilantro leaves(optional).
