Mushrooms and Red Bell Pepper Stir Fry


Ready in just 20 minutes, this mushroom and red bell pepper stir-fry is a great vegetarian side dish.




2 tablespoons  oil

1 red bell pepper, sliced

2 cloves garlic, minced or crushed

16 ounces king mushrooms ( or any of your favorite mushrooms), sliced

1 green onions, diced

2 teaspoons soy sauce

1/2 teaspoon sesame seed oil

Kosher or sea salt, to taste

Fresh cracked black pepper, to taste



Step 1:    Heat a large skillet over medium-high heat. Add the oil and then stir in the green onions and garlic. Cook for about 2 minutes or until the onions are soft.



Step 2:    Add the mushrooms and stir occasionally until the mushrooms are lightly browned and tender, 3 to 5 minutes.  Add red bell pepper and stir for 1 minute.  Stir in the soy sauce, sesame seed oil . Cook until heated through. 1 minute.



Season with salt and pepper if desired.
