Chicken Asparagus Rolls
4 tablespoons corn starch
3 tablespoons green onion diced
1 teaspoons soy sauce
2 teaspoons cooking wine
1 teaspoon ground black pepper
1/2 teaspoon salt
1 bundle green onion
16 spears fresh asparagus, trimmed
4 skinless, boneless chicken breast halves
Step 1: Thinly slice the chicken breast halves into large thin pieces. Add salt, black pepper, 2 tablespoons of corn starch, cooking wine and soy sauce and chicken to a bowl. Mix well. Set aside.
Step 2: Peel and trim asparagus. In a large skillet, bring 1/2 in. of water to a boil. Add asparagus; cover and boil for 3 minutes. Drain and immediately place asparagus in ice water. Drain and pat dry. Cut off 3 inch of the white part of green onion. Slice it thinly. Diced the green part of the green onion.
Step 3: Take one piece of chicken. Place some corn starch on the top. Put one piece of asparagus on top. Roll it up. After finish rolling up all pieces. Heat up a pan. Add 2 tablespoon of oil. Pan fry the chicken. Turn it over to make sure it is cooked on all side. Once all the chicken changed color to white take everything out the pan and set aside.
Step 4: Use the same pan with the left over oil. Add sliced green onion and the left over pieces of asparagus if there is any. Stir fry for 2 minutes and set on a plate. Place the chicken asparagus rolls on top. Put diced green onion on top and serve.
