Yangzhou Fried Rice

Yangzhou (also spelt as Yang Chow) Fried Rice

 

Yangzhou (also spelt as Yang Chow) Fried Rice, invented in and named after Yangzhou city in east China’s Jiangsu Province, is a popular wok fried rice dish in many Chinese restaurants around the world. A mix of rice, meat and vegetables, it is nutrient and perfect for a quick & simple meal.

 

 

Ingredients

 

3 tablespoons peanut oil
3 eggs, lightly beaten
1 tablespoon peeled and grated ginger
1 medium carrot, cut in 1/4-inch dice
4 ounces cooked Chinese pork (char siu) or ham, cut in 1/4-inch dice
4 oz shrimps
1 tablespoon corn starch
1 small cucumber (or other green vegs)
1 cup frozen peas
1 cup yellow corn
3 cups cooked jasmine rice, a day old
1 to 2 tablespoons light soy sauce
Sea salt and freshly ground white pepper
1 teaspoon toasted sesame oil
1 to 2 green onions, sliced on a diagonal, for garnish

Direction:

Step 1:     Cut all the vegetables and ham.   Mix shrimps and corn starch in a bowl and set aside.

         

 

 

Step 2:    For the fried rice: Heat a wok over high heat and add 1 tablespoon peanut oil.  Add shrimps and stir fry for one minute till shrimps change color, then set aside on a plate.  Use the same wok.    Add  1 tablespoon peanut oil to the wok. Add the ginger and stir-fry for less than 1 minute.  Add the ham,  cook for 2 minutes.   Then add the carrots and all the other vegetables.  Stir-fry for 1 minute more.  Then set aside on a plate

    

 

 

Step 3:   Using the same work.  Heat up with 1 tablespoon oil.    Add the eggs and scramble.    Add the cooked rice and mix well.   Add all the vegs and ham into the wok.   Stir fry for 2 minutes.  Add the shrimpes back into the wok. Season the mixture with the light soy sauce, salt and pepper. At the very end add the sesame oil  if using. Check the seasoning and adjust to taste with salt and pepper.

            

 

 

 

Garnish with green onions and serve immediately.
