Sweet and Sour Pork Ribs

This is a traditional Chinese dish, and it is very popular in China. My this recipe is simple and the taste is rich, sweet, sour, and delicious!

 

Ingredients:

  • 1 pound spare ribs, preferably cut into 2-inch sections
  • 1 large yellow mango (prefer mango that is firm) cut into chunks
  • 1 quart cooking oil
  • 3 tablespoons Shaoxing rice wine
  • Kosher salt
  • 2 teaspoons soy sauce
  • 2 teaspoons sugar
  • 4 tablespoons ketchup
  • 1/2 teaspoon sesame oil, optional
  • 1 large egg
  • 3 tablespoons cornstarch

 

Directions:

Step 1:  Mix pork ribs with a pinch of salt.  set aside for 5 mins.

 

 

Step 2: Peel and cut the mango into chunks.

 

 

Step 3:  Mix egg with 1 tablespoon cornstarch.

 

 

Step 4:  Add egg mixture to pork ribs. Mix well.

 

 

Step 5: Heat oil in a wok over high heat until it reaches 350°F.  Add ribs to oil and fry until golden brown, about 5 minutes, turning and agitating occasionally as they cook. Using a slotted spoon or chopsticks, transfer ribs to a paper towel-lined plate. Set aside.

 

 

Step 6: To make the sauce.  In a small bowl, add 2 teaspoons soysauce, 2 teaspoons sugar, 4 tablespoons ketchup, 1 tablespoon cornstarch, 1/2 cup water. 3 tablespoons Shaoxing rice wine.  Mix well.

 

 

Step 7: Pour all but 3 tablespoons of the oil in the wok. Return wok to medium heat and heat oil until shimmering. Add the mango chunks and stir-fry for about 30 seconds.   Take the mango out and set aside.

 

 

Step 8:   Add the sauce to the same pan and bring to a boil.   Add the ribs and stir-fry for a minute longer. add one cup of water. Simmer over low heat until the ribs are tender, 30 to 40 minutes. As the liquid reduces, turn the ribs and spoon the liquid over them.  Then add the mango chunks.

 

 

Step 9: Turn off the heat, mix well to make sure sauce covers all the ribs and mango.   Drizzle in the sesame oil if using, and serve warm or at room temperature.
