Summer Squash Egg Stir Fry


A simple yet tasty way to enjoy summer squash.   The squash is briefly stir fried with eggs so that it is soft but not mushy.   This stir-fry takes full advantage of summer squash’s sweetness and leaves its luscious texture intact, ready to savor.




4 egg, beaten
1 large summer squash   or 2 small ones
4 tablespoons oil
¼ teaspoon salt
½ tablespoon soy sauce


Step 1:   Slice the summer squash.    Heat 2 tablespoon oil in a pan over medium heat, pour in the egg, wait for the egg to set and then break it into  pieces with a spatula, stir fry for another 30 seconds until fragrant, set aside.



Step 2:    Add 2 tablespoons oil into the pan, stir in the summer squash, stir fry for 1-2 minutes over medium-high heat.
Toss in some salt and soy sauce, stir fry for 2-3 minutes and mix well.  Add the egg back into the pan, cook for another minute and serve.
