Stir Fry Pork With Tomatoes

Tomato and pork stir-fry is classic, simple and delicious.    It is a  variations of the national Chinese dish stir fry egg with tomato.     It’s definitely a staple dish served with rice at home. If you are just starting to learn how to cook in a wok, this is a great recipe for a beginner.   The cooking method is stir fry but the dish usually ends up looking like a stew due to how juicy the tomatoes are.   With the extra sauce it goes very well with rice.

 

 

Ingredients:

  • 12 oz pork
  • 2 tablespoons corn  starch
  • 3 tablespoons soy sauce
  • 1 pork tenderloin (1 pound), cut into 2-inch strips
  • 2 teaspoon salt
  • 2 tablespoons sugar
  • 2 tablespoons ketchup optional
  • 4 medium/large tomatoes
  • Steamed rice for serving
  • 1 teaspoon corn starch mix in 2 teaspoon water, optional
  • 1 tablespoon minced green onion for garnish

 

Directions:

Step 1:    In a small bowl, combine cornstarch and pork strips until smooth. Stir in the soy sauce.   Set aside.  Cut the tomatoes.

    

 

Step 2:    In a wok or large skillet, stir-fry pork in 1 tablespoon oil until juices run clear.  Add tomatoes to the pot.   Give it a stir and cover with a lid for 2 minutes. Cook until the flesh is softened. Use a the spatula to break up the big tomato pieces so that the flesh would quickly form a sauce.   Add salt, sugar and ketchup (optional) and mix well. Stir until it’s well incorporated.  Add green onion for garnish.

             

 

Optional: If the sauce is too watery, you can mix the cornstarch and 2 teaspoons water in a small bowl until well combined. Add the cornstarch slurry to the wok and cook for a few more seconds and transfer to a plate.   Serve with rice.
