Siu Mai

Classic Chinese Dim Sum consisting of Sticky rice, also known as glutinous rice and a vibrant garden mix of onion, peas, and corn; placed in a dumpling wrapper.  It tastes super good with Chinese sausages.  Minced meat is not necessary but will increase the flavor. For vegan readers, skip meat and add  mushrooms.

 

 

Ingredients

1.5 cup glutinous rice
48 dumpling wrappers
2 links of Chinese sausage, diced
1/2 red onion, diced
4 oz sweet corn
4 oz green pea
pinch of salt
1 tablespoon dark soy sauce
1 teaspoon sugar

 

Direction:

Step 1:    Soak the glutinous rice with clean water at least for 24 hours. Move out and drain. Transfer to rice to a rice cooker.  Add just enough water to cover the rice.  Cook as white rice.

    

 

Step 2:    Heat up cooking oil on wok or pan, add chopped onion in to stir-fry for 1 minute.  Then add dice Chinese sausage (or ground meat of your choice), corn and green pea  fry until for 3-4 minutes.   Add salt, dark soy sauce, sugar.    And  cooked sticky rice and 1/2 cup water. Stir continually. Heat until the sauce is almost absorbed.

                 

 

Step 3:    Assemble siu mai with dumpling wrappers. Steam siu mai over high fire for 20-25 minutes.

            

 

Serve hot!
