Shrimp Curry Fried Rice

Almost everyone has had fried rice at a Chinese restaurant, but have you ever had Curry Fried Rice? I don’t think I’ve ever seen it on the menu anywhere, but it’s so easy to make at home. Fried rice is one of those meals that was created as a way to use all all the bits and pieces of leftovers in the refrigerator, including leftover steamed rice.
Ingredients
1/2 cup carrots chopped
1 tablespoon olive oil
1 tablespoon garlic and 1 tablespoon ginger
1 1/2 teaspoon curry powder
1 cup shrimps
2 cups cooked rice
1 tablespoon oyster sauce
1 scallion chopped
1 red bell pepper cut into small pieces
1 yellow bell pepper cut into small pieces
1/2 cup yellow corn
1 egg
Direction:
Step 1: Cut all the vegetables. Drain water from the yellow corn if using caned yellow corn. Slice ginger and garlic. Wash shrimps and drain water.
Step 2: Heat oil in a large pan; add garlic and ginger. Saute for about 1 minutes. Add shrimps. Stir fry till shrimps change color. Take shrimps out of the pan and set aside. Discard ginger.
Step 3: Use the same pan. Heat 1 tbsp oil in pan. add bell peppers, along with carrots, yellow corn. Stir-fry for 2 minutes. Add mushrooms and stir fry for 1 minutes. Add shrimp and mix well. Put everything out onto a plate and set aside.
Step 4: Heat up the same pan. Add rice. Break the rice lose. Add curry powder. Mix well. Add 1 egg. Stir fry for 2 minutes. Add all the vegetables and shrimps back in the pan. Add oyster sauce and continue to toss until rice is hot. Salt and pepper to taste.
