Shrimp， Egg and Asparagus Stir-Fry
Shrimp， Egg and Asparagus Stir-Fry is a simple, light yet perfectly flavorful dinner that is sure to please.
2 tsp peeled and thinly sliced fresh ginger
1 1/2 tsp diced garlic
1/4 tsp sesame oil, optional
1 1/4 lbs large (21/25) shrimp
2 Tbsp canola oil or olive oil
1 lb asparagus (preferably thicker spears), woody ends trimmed, diced into 1-inch pieces
Step 1: Heat 1 Tbsp oil in a 12-inch non-stick skillet over medium-high heat. BEAT eggs in medium bowl until blended. POUR in egg mixture. As eggs begin to set, gently PULL the eggs across the pan with a spatula, forming large soft curds. Take scrambled egg out and set aside.
Step 2: Heat 1 Tbsp oil in the same skillet over medium-high heat. Add ginger and garlic and stir fry for 30 seconds till fragrant. Add shrimp. Cook on first side about 1 1/2 minutes then flip and cook on opposite side until cooked through, about 1 1/2 minutes. Add asparagus and saute until tender, about 4 – 5 minutes.
Add in scrambled eggs and salt to taste. Serve warm over white or brown rice, garnish with sesame seeds if desired.
