Scallion Flatbread

This delicious scallion flatbread is sold all over China. Make it at home with these easy-to-follow instructions. Eat as a snack or as part of a meal. Also known as scallion pancake.

 

 

Ingredients

2 cups all-purpose flour
1 cup water
kosher salt
4 green onions, white and green parts thinly sliced
1/2 cup vegetable oil

 

Direction:

Step 1:    Mix flour and 1 teaspoon salt together in a bowl; add water and mix until dough is well combined.  No need for dough to be smooth.  Brush oil on the dough.  Cover with plastic wrap and set aside for 10 minutes.

    

 

Step 2:     Flip dough onto a floured work surface and knead for about 1 minute; shape into a ball. Cut dough into 8 equal pieces, forming each into a ball.  Brush each dough ball with oil.  Cover with plastic wrap and set aside for 40 minutes.

    

 

Step 3:   In the mean time,  dice the green onion.  Put green onion in a bowl.  Add 3 tablespoon flour  and 1 teaspoon salt to the bowl.  Heat up 4 tablespoon oil.  When the oil is almost to the smoking point,  pour oil into the bowl with green onion and flour.   Mix well.

 

Step 4:    Roll each ball into long thin rectangular sheets with a rolling pin. Brush each piece, from center to edges, with green onion and oil mixture. Roll into thick ropes, securing green onions. Coil each piece, then roll out into thin disks.

 

Step 5:    Heat 1 tablespoon oil in a nonstick skillet over medium heat, and cook each flatbread until golden brown, about 2 minutes per side. Transfer to a paper towel-lined plate to absorb any excess oil. Repeat with remaining oil and flatbreads.
