Sautéed Garlic Broccoli with Tomatoes
A FAST AND EASY VEGETABLE SAUTE: HEALTHY FOOD FOR BUSY DAYS.
1 1/2 lbs broccoli including stems roughly chopped
10 oz tomatoes cut into chucks
5 large garlic cloves grated
1 green onion, thinly sliced
2 tbsp oil
1/2 tsp + a pinch salt
Step 1: Preheat large skillet on medium heat and swirl 2 tbsp oil to coat. Add 2 gloves of garlic and green onion. Sauteed for 30 seconds. Add tomatoes with a pinch of salt; stir, cover and cook for 3-4 minutes. Shake the skillet to turn and make tomatoes juice running out.
Step 2: Add broccoli and remaining 1/2 tsp salt; stir, cover and cook for 5 minutes, stirring once. Add remaining 3 garlic cloves and stir. Serve warm.
