Rainbow Bell Pepper Egg Stir Fry
Vegetables and Egg stir fry is one of the most popular dish in China. It is super easy to make and great over rice as a quick dinner that can be on the table under 20 minutes. This stir-fry of colorful bell peppers is an especially nice addition.
2 tbsps olive or vegetable oil
1 red bell pepper
1 orange bell pepper
1 green bell pepper, I wasn’t able to find a green bell pepper this time
1 tablespoon light soy sauce
2 green onions , thinly sliced
Step 1: Heat 1 tablespoon oil in a wok or large wide frying pan set over medium-high heat. Whisk the eggs and pour into pan. Stir briskly until eggs are scrambled as you like. Set aside.
Step 2: Heat another tablespoon oil in the same pan. Add pepper and stir-fry for 1 minute until vegetables are almost tender-crisp. Add eggs back into the pan. Add soy sauce and green onion. Mix well. Serve as a side or main over rice.
