Potato Pancake


So simple, yet unbelievably tasty. This is a modern Chinese potato pancake recipe, and is a wonderful comfort food.



2 large potato or 2 cup mashed potatoes
1 to 2 egg
1⁄4 cup flour
salt to taste
1 tablespoon black pepper
1 glove garlic, minced
1/2 carrot,  diced
1/2 green bell pepper, diced
2 oz sweet corn
2 oz ham, diced



Step 1:  Make mashed potato or use left over mashed potato.   Bring a pot of salted water to a boil. Add potatoes and cook until tender but still firm, about 15 minutes; drain.
Using a potato masher or electric beater, slowly blend  potatoes until smooth and creamy.



Step 2:    Mix mashed potatoes, egg, flour, salt, pepper, green pepper, carrot, ham, sweet corn, and garlic into mashed potatoes.  Form into small balls.



Step 3:    Preheat skillet and add a couple of tablespoons of  oil.  Make mash potato balls into disks and place in the skillet. brown on both sides.
