One Pot Beef Curry Rice

 

A hearty stewed beef and rice dish deeply flavored with curry favor. Spice up your dinner with this easy one pot Beef Curry Rice recipe.  This recipe for Easy Curry Beef Rice takes that delicious, slow-cooked flavor and distills it into something that is fast, easy, and just as flavorful and comforting.

 

Ingredients:

3 tablespoons oil
1 large onion, thinly sliced
2 cloves garlic, minced
1 large carrot, thinly sliced
1 pound  beef stew meat
4 tablespoons curry powder
3 cup rice
1 tablespoon raisin (optional)
¼ teaspoon sugar
¼ teaspoon black pepper
1 teaspoon salt
1½ cups beef broth
1 cup chestnuts (optional or use 1 large russet potato, cut into a ½-inch dice instead)

 

Direction:

Step 1:    In a large pan, heat the oil over medium high heat. Add the onions, carrot, and garlic and cook until translucent and just slightly caramelized. Add the  beef and cook the beef until browned.

        

 

Step 2:    Next, add the curry powder,  sugar, black pepper, and salt. Stir to combine. Add chestnut, raisin(optional), or potato and rice to the pan.   Add enough beef stock or water to cover the rice.  Cover the pan.  Turn heat to low and let simmer for 25 minutes.  Turn off the heat and let the pan site for 10 more minutes.      Or pour everything into a rice cooker and choose the option for normal rice cooking.
