Mushroom and Cabbage Soup

 

This soup is delicious, healthy and packed with vegetables! Such a warming comfort food!

 

Ingredients:

½ napa cabbage or cabbage, cut into large chunks
1 lb  baby bella mushrooms or white mushrooms
1 tablespoon crushed garlic
8oz  tofu,  cut into small chunks
10 cups  vegetable broth
Salt and pepper to taste

Directions:

Add vegetable broth to a large pot.  Bring to a simmer.   Add mushrooms,  tofu, and cabbage to the pot.   Bring to a boil and cook for 10-15 minutes or until vegetables are tender.

                    

 

Add salt and pepper to taste.  Serve.
