King Mushroom Noodle Stir Fry
A simple, versatile Chinese noodle dish with sliced mushrooms and a hot and spicy sauce. It earthy, flavorful, rich and totally vegan!
2 tsp finely chopped garlic
1 green bell pepper, thinly sliced
1 lb king mushroom ( or any of your favorite mushroom) thinly sliced
2 tsp sweet chilli sauce or chilli bean sauce ( or any of your favorite hot sauce/ hot oil)
1 tbsp Shaoxing rice wine or dry sherry
1 lb Chinese noodles (or any of your favorite noodle), cook according to instruction on the package
½ tsp freshly ground pepper
2 tsp sesame oil (optional)
Step 1: Cook the egg noodles according to packet instructions. Drain, then rinse under cold water and drain again. Toss with 1 teaspoon of the oil and 1/2 teaspoon black pepper.
Step 2: Heat a wok or large frying pan until very hot. Add the oil and when it’s very hot and slightly smoking, add the garlic and stir-fry for about 20 seconds. Add the mushrooms and stir-fry for about 30 seconds. Add chili sauce and stir fry for another 30 seconds. Mix well. Add noodle and sliced green pepper and toss using tongs for 1-2 minutes or until heated through. Drizzle with sesame oil if using.
Serve while hot.
