Fried Rice with Ham

 

When you have leftover ham,  make fried rice with ham.   It’s easy to make, a great use for leftover ham and, most importantly, completely and utterly delicious.  Believe me, it is way better than any takeouts and it is so budget friendly.

 

 

 

INGREDIENTS:

3 tbsp. canola, peanut, or avocado oil
1 tbsp. butter
4 eggs, lightly beaten
2 large carrots, peeled and thinly sliced
1 small white onion, diced
2/3 c. cubed ham
3 cloves garlic, minced
4 1/2 c. cooked and chilled rice*
¼ c. low-sodium soy sauce (more to taste)
2 tsp. sesame oil
3 tsp. oyster sauce
1 stalk green onions, diced

2 hot red chilli pepper, diced ( optional)

 

Direction:

Step 1:    Preheat an extra large skillet or wok to medium heat . Add 1 tbsp. of the butter into the pan. Once the butter has melted, add the lightly beaten eggs. Let them cook for about 30-40 seconds or until set, then scramble. Once the eggs are fully cooked, remove them and set them aside.

 

Step 2:    Add the oil to the pan, when the oil is hot, add the onion and cook for 1 minute. Add ham, cook until onion is soft and translucent.  Add carrots and cook for 1 minute. Turn the heat up slightly and add the cold rice. Cook the the mixture for about 2 minutes, then stir. Repeat two more times. Add the soy sauce, sesame oil and oyster sauce.

                

 

Sprinkle in the green onion and dice hot red chilli pepper if using, cook for an additional 2 minutes. Remove and season to taste.
