Fish with Tomato Sauce
Savory fish and sweet-yet-slightly-tart tomato sauce. Though you can put this simple tomato sauce together in a matter of minutes, it has a surprisingly complex flavor.
Ingredients
1 tablespoon cooking oil
1 cup green peas
1 thumb thinly sliced fresh ginger
4 large tomato, diced
3/4 teaspoon salt
2 pounds cod or scrod fillets, slice to 1 inch pieces
1/4 teaspoon fresh-ground black pepper
2 tablespoon cooking wine
1 tablespoon soy sauce
Direction:
Step 1: Slice the fish. Marinate fish with ginger, 1 teaspoon salt and cooking wine. Dice the tomatoes.
Step 2: In a large deep frying pan, heat the oil over moderately low heat. Add the tomatoes and salt and bring to a simmer. Reduce the heat to low and cook, covered, for 10 minutes. Add the green peas
Step 3: Add 1 tablespoon soy sauce. Add the fillets and black pepper to the pan and turn heat to high. Make sure at least turn the fish over once. Cook for 5 minutes. Serve the fish topped with the sauce.
