Easy Egg Sandwich

Egg sandwiches are a great option for those mornings when you just don’t have time to sit down to a plated meal. While all that is really require is an egg and some form of bread, we hope you decide to take your sandwich to the next level.

INGREDIENTS

2 slices of thick-cut bacon, cooked crisp
2 tablespoons mayonnaise
2 tablespoons milk
1 thick slice of bread or any kind of your favorite bread or bun
1 tablespoon butter
3 eggs
2 tablespoons chopped chives
slice of sharp cheddar cheese
salt and pepper to taste

 

Diection:

Step 1:   In a bowl, add eggs and milk.  Use a spatula to stir the eggs together, until the yolk and whites are blended in a uniform yellow color.  Place egg mixture over medium-low heat. Using a spatula, continue stirring the eggs until the butter has melted and is well-incorporated, and the edges of the eggs begin to curdle. Once the eggs start to coagulate, remove from heat and stir the curds from the edges of the pan. Add in chives, and season with salt and pepper. Transfer eggs to a separate bowl.

        

 

Step 2:    Heat up a pan.  Cook the bacon however way you want, but I recommend cooking it crisp Split the thick slice of bread (or any of your favorite bun) in half and toast on the same skillet.

        

 

Step 3:     Spread the mayo on the both halves. Pile the scrambled eggs on the bottom half. Add cheese, then bacon, then top with the sandwich with extra mayo. Enjoy!
