Cucumber stir-fry with eggs


Cucumber stir-fry with eggs is a home-style recipe, simple and flavorful, and taste absolutely fabulous.




2 large eggs
½ salt, divided
2 tablespoons oil
1 green onion, sliced
4 dried red chili (optional)
½ cup sliced cucumber (prefer English cucumber because it has very little seeds)
¼ sugar
½ sesame oil


In a container, beat the eggs, add ¼ teaspoon salt and mix well. Heat 1 tablespoon of the oil in a wok or saucepan, (make sure oil is hot) then pour in the egg mixture, and cook until no runny egg is seen (or about 2 minutes). Remove cooked eggs and set aside. Heat the remaining tablespoon oil in the wok, add red chili (skip if do not like spicy food), green onion and cucumber. Stir fry for 30 seconds. Add cooked eggs back into the pan and stir in sugar, ¼ teaspoon salt. Drizzle sesame oil and stir for 10 more seconds. Serve over rice.
