Coconut Crusted Sweet Potato Fries

 

Golden, crispy, and delicious sweet potato fries baked in a coconut crust. This simple recipe makes a fabulous healthy snack & side dish.

Ingredients

1 large sweet potato cut into wedges
1-1/2 tablespoons olive oil or melted coconut oil
1 tablespoon + 2 teaspoons coconut sugar
1.5 tablespoons tapioca starch (or corn starch)
3/4 cup finely shredded coconut
¼ teaspoon sea salt plus more for serving

 

Direction:

Step 1:    Preheat the oven to 425 degrees F. Wash and dry the sweet potato and chop it into wedges (or match sticks). Add the cut sweet potatoes to a mixing bowl along with the rest of the ingredients. Toss everything together using your hands until the potatoes are well-coated.

        

 

Step 2:    Spread the sweet potatoes in a single layer on a large non-stick baking sheet.Place on the center rack of the oven and bake for 25 to 30 minutes, flipping the fries half-way through, or until fries are golden brown and crispy.

    

 

Remove tray from the oven and allow fries to cool on the baking sheet for 5 minutes before serving.
