Chinese Spicy Roasted Fish
Whole roasted fish might seem a little daunting if you’ve never tried it before, but it is very similar to cooking fish fillet. Chinese Spicy Roasted Fish is one of the most popular dish in China. It is tasty, pungent and super addictive.
1 whole fresh fish about 1 to 1 1/2 lb
2 cup chicken broth (or water)
2 ~3 fresh chili peppers sliced
1 onion sliced
1 handful coriander
1 bag (12oz) bean sprouts, optional
1/2 small celery, thinly sliced
1 tablespoon fermented black bean sauce dou chi jiang
1 teaspoon chili powder
1 tablespoon doubanjiang , chili bean paste
1 teaspoon Sichuan peppercorn
5 cloves garlic sliced
1 section of ginger sliced
1 tablespoon shallots sections
2 teaspoons Salt
1 tablespoon sugar
Step 1: Have the fish butterflied if possible. Cut several cuts on both sides of the fresh. Rub the whole fish with 1 tablespoon of salt, white part of green onion, and half of the ginger. Set aside for 30 minutes. Preheat oven to 400 degrees C . Line a baking tray with a sheet of parchment and spray a thin layer of olive oil on top.
Step 2: Mix chili bean paste, black chili paste and chili powder in a small bowl. Heat the wok over medium high heat and add oil. When the oil is warm, add peppercorns. Stir until fragrant and the peppercorns turn dark brown, 30 seconds to 1 minute. Turn to lowest heat. Use a ladle to scoop out the peppercorns and discard them.
Turn to medium high heat. Add the the minced ginger and garlic and stir a few times until fragrant. Add the rest of the onion. Stir until the onion turns translucent, about 1 minute. Add the mixed sauce and stir immediately to coat onion with sauce evenly, 30 seconds. Add chili pepper, stir a few times to mix. Add chicken broth and sugar. Bring up to a boil. Add all the vegetables. Stir continuously for 1 to 2 minutes until the seasonings are mixed evenly. Turn off the heat.
Step 3: Put all the vegetables on a deep baking pan. Put fish on top of the vegetables. Pour the rest of the sauce on top of the fish. Put into the oven and bake for 30 minutes. Garnish with cilantro and serve.
