Chinese Sausage Fava Beans Stir Fry


Delicious and meaty, fava beans (also called broad beans) are used  widely in Chinese cooking.  Here is a recipe for spring, and new beginnings.  Chinese sausage and fava beans stir fry.   Easy, delicious and healthy.




8 oz fava beans
1 Chinese sausage ( about 2 oz), sliced
2 tablespoons peanut or vegetable oil
1 scallions, sliced
2 cloves garlic, minced
1/4 teaspoon salt

1 tablespoon soy sauce
1 tablespoon oyster sauce



Step 1:    Heat a wok or large skillet over medium-high heat. Add the oil and swirl to coat the base. Add the Chinese sausage and stir-fry for 2 minutes, just until it changes color on both sides.  Add soy sauce and oyster sauce and stir fry for 30 seconds.



Step 2:    In the same pan, add garlic and the fava beans and stir-fry for about 1 minute.   add the scallions and salt and stir fry for another minute.



Transfer to a plate and serve.
