Chinese Okra Shrimp Stir Fry
This is a typical Chinese stir fry involving Chinese okra and shrimp. It is easy to make and fast! If you have never cooked with Chinese okra, this recipe is a great place to start — and if you already love okra, then this a good recipe to add to your rotation.
Ingredients:
1 Chinese Okra, about 1 and half lbs (Sinqua or Singkwa) (Both names used interchangeably)
8 oz medium shrimp
1/2 tbsp soy sauce
1 teaspoon chopped garlic
1 teaspoon chopped fresh ginger
ground black pepper and salt to taste
Direction:
Step 1: Peel the Chinese okra, cut and leave some green part for nice coloring. If the Chinese okra is tough, peel off all the skin.
Step 2: Heat another 1 tbsp oil, add ginger and garlic, stir fry for 30 seconds. Add the shrimps and pinch of salt. Cook 1 minute on each side. Add Chinese okra and stir fry for 1 minute. Add soy sauce. Add ground black pepper and salt to taste. Let cook for 4 minutes till Chinese okra is tender.
Serve immediately.
