5 dried red chiles, crushed
1 bunch scallions, whites sliced thinly across, greens in 2-inch pieces
2 star anise
1/4 cup rice vinegar
2 bottles ale beer, such as Bass or Sam Adams Summer Ale

Vegetable oil, for frying

Step 1:     Clean and dry the chicken wings.  Make a few cuts on each chicken wing to better get in the favor.    Heat up a pan.  Add oil.  Place the chicken pieces in the pan. Let fry until they are slightly brown.

Step 2:    Add ginger, green onion, star anise, garlic, and dry red chilis.    Fry on a medium high heat until fragrant.  Add beer.   Add soy sauce, rice vinegar and sugar.  Bring the water to a boil. Cook for 15 minutes on a low heat with the lid on. Give everything a quick stir. Then put the lid back on and continue cooking for another 10 minutes.
